Bruschetta

  • 4 ripe tomatoes
  • 1/2 pound fresh mozarella
  • 4 fresh basil leaves
  • 4 large slices of sourdough or Italian bread
  • 4 cloves garlic
  • 1/2 cup extra virgin olive oil
  • salt and freshly ground black pepper

Wash and dry tomatoes. Cut out stems, and cut into 1/2 inch pieces. Cut mozarella into 1/2 inch pieces and chop basil into small strips. Cut slices of bread into half, and toast until golden brown and crisp.

Note: Watch out for toasting the bread for too long.

Peel and half garlic cloves, and rub generously onto one side of toasted bread. Drizzle 1 tablespoon of olive oil onto each slice. Top each slice with diced tomatoes and mozarella. Garnish with basil strips. Add salt and pepper to taste.
