Preheat oven to 350 F.
Combine flour, sugar, and rolled oats. Add butter until you've got a slightly mushy and crumbly consistency. Add cinnamon, nutmeg, and allspice to taste.
Slice enough apples to generously cover the bottom of a medium sized pyrex backing dish. Sprinkle mixture over fruit, and bake until crispy & brown -- about 25-30 minutes.
