Guacamole II

Yields:2 1/4 cups

This recipe is not as good as Guacamole, but doesn't require tomatillos.

  • 1 large garlic glove, peeled
  • 1 medium jalapeno pepper, halved and seeded
  • 1/2 cups cilantro leaves, tightly packed
  • 1 scallion, cut into 1 inch pieces
  • 3 ripe avocados, peeled, halved, and pitted
  • 3 tablespoons lemon juice
  • pinch cumin
  • 1/4 tablespoon salt
  • 1 tomato, quartered, seeds removed
  • 1/4 teaspoon chili powder
  • food processor

In a food processor, chop garlic, pepper, cilantro, and scallion until minced, about 15 seconds.

Add avocados and all remaining ingredients except tomato. Process until smooth, about 1 minute.

Note: If you like chunks of avacado, leave some of the avocado out, and put in with the tomatoes.

Add tomato and pulse about 6 to 8 times, until it chopped.

Salt to taste.
