Add flour to a food processor. Add eggs and pulse a few times until the mixture begins to form a dough. Scrape out onto a lightly floured counter and knead into a stiff but cohesive dough. Wrap with plastic wrap and let relax for 15 minutes.
If you don't have a food processor, make a mound with the flour on the counter. Create a well in the center and plop the eggs into the well. Using a fork, stir the eggs in a circular motion, gradually incorporating the flour until you have a ragged dough. Knead by hand until you have a stiff but cohesive dough. Wrap with plastic wrap and let relax for 15 minutes.
Roll out dough according to the instructions that came with your roller, or whatever machine you're using -- if you're doing it by hand, you certainly don't need these instructions. Err on the side of using too much flour, as gumming the machine up is a real nuisance, but try to be as stingy with the flour as possible.
