Pastoral Macaroni

  • 1 pound rigatoni
  • 1 pound ricotta
  • 3 tablespoons unsalted butter, at room temperature
  • Pecorino Romano cheese, freshly grated
  • salt
  • black pepper, freshly ground
  • cayenne pepper, ground

Place a deep serving dish in the oven, set to low.

Cook pasta in a large pot of salted boiling water. A few minutes before pasta is ready, take serving bowl out of the oven, and mix together ricotta, butter, salt, cayenne pepper, and black pepper. Add 1/4 cup of the pasta cooking water to create a creamy sauce.

Drain pasta, add to serving bowl, and mix.

Serve with grated Pecorino Romano cheese on the side.
